Burgess Cabernet Sauvignon 2002

I picked up some Swiss Chard as part of the Paleo ingredients for tonights dinner.  Moxie warned me that it would be bitter which gave me pause to think of a good pairing.  Turns out she was incorrect- the Chard was superb, crunchy, full flavored as well as balanced.  I de-stemmed the leafs, washed the bright red stalks and rinsed the rich green leaves.  Sauteing the thicker stalks and garlic in some European butter, I added the leafy parts right before serving.  It was a great new revelation in our quest for new foods to eat following the caveman diet.

Back to the wine….  I absolutely love the ’96 Burgess and think it is a well developed Cabernet that shows great evolution and firm structure.  I have built up a few bottles of various vintages, hoping for replicas.  Having tasted this particular vintage about two years ago, I was somewhat disappointed with its development and banished the remaining bottles  to the cellar.

With tonight’s menu, I felt I needed a fruity yet somewhat mature Cabernet to do battle with the potential bitterness awaiting us in the sauté pan.  I picked the Burgess as I felt it would fit the profile.  It worked, but it need not have bothered- as I mentioned the Chard was great and did not reflect the anticipated dryness.  The wine however showed great length and purity.  A young purple color in the glass followed by a gorgeous plum and black fruit nose gave way to a smooth tasting Cali Cab.  Dark fruits and cedar mixed with some leather and funk.  Seriously smooth tannins caress and the whole thing is on tip-toe, balanced impeccably.  I truly wonder how great this wine could be if given another 5 years, i’m guessing it will evolve like it’s big brother the 1996.  I am super stoked that I opened this wine and uncorked a monster in the bottle.   It is refined, yet powerful, fruity but svelte, satisfying and alluring.  I dig this wine.  I used to be so anti-Napa, but Burgess really opened my eyes (palate).  I have come to appreciate the longevity, finesse, fruitiness as well as the evolution of the better wineries.  For $55, you can still find this wine out there.  Not a bargain, it will reward you for many years to come as it is just starting its way towards the secondary life of tertiary flavors.  5 stars because I reckon this is a 91 point effort. I have drunk numerous bottles of the lovely ’01 Penafiel wine and love its evolution.  Speaking of evolution, our caveman diet continues and Moxie has really gotten creative. Tonight, she used my Moroccan Tagine for the first time.  Designed by the Bedoins, it needs very little liquid and was used to slow cook meat, spices and fruits.  The conical top retaining the moisture while the ceramics evenly distributed the heat.  For our dinner, beef with butternut squash seasoned with paprika, cinnamon, ginger, red and black pepper, garlic, cilantro, onion and salt.  She added some whole tomatoes not realizing how much liquid they would add to the pot.  A truly sumptuous dietery meal that was complex, filling and a revelation.

To the wine. I needed something that would handle the beef, the spices and offer a complexity to match the ingredients.  I found it in my old favorite.  The wine has matured since I last tasted it and the secondary life is now alive and kicking.  Still dark purple on the nose, I saw no bricking (indicating age).  The nose was vibrant, with cherry, red currants, oak and spice.  I was getting excited about the first sip.  It offered up a mature compote of berries, blue and red.  Black stone fruits and some spice with a hint of vanilla came through.  The extra depth was made up of earth and cedar, with some plum notes mixing it up with incredible tannins.  The structure of this wine is amazing.  Precise acidity and hand crafted tannins are holding this wine upright.  I honestly think it is just starting its evolution, with at least another 4 years ahead.  It paired beautifully with the dinner as the wine was able to stand up to the myriad of spices Moxie had thrown in there.  Made from 100% Tempranillo, it rates a 92 from me and 5 stars.  I can’t remember what I paid for it, but if you can find it you need to get summmm.  Salut….

I’m starting to sound like a broken record….. 2009 Bordeaux has got to be one of the finest vintages ever made, anywhere. This bottle is no exception. For $16, you get a good dose of red berry and spice on the nose. It caresses the mouth with great ripe tannins, berry, spice and cedar. A tad young as the tannic component is still in the forefront, but not obtrusive. Good balance and a long finish. This wine reminds me a lot of the Carpe Diem I just drank. Very juicy, bold and mouthwatering. Based mainly on Merlot, Cab Sav and Cab Franc are in the blend a’ la Right Bank. I forgot to mention this Domaine’s heritage: Jean Luc Thunevin of Bordeaux fame created this wine alongside his much pricier “Garagiste” wines and his talents really show. I found out that WS gave it 89, I’m going 91 and for the money—-5 stars baby. You can’t go wrong with this wine, it should last at least until 2018. Salut….

Served on a Virgin America flight. I was pleasantly surprised, after it had a chance to breath that is. Initially, overly tannic and sharp. Once I gave it 30 minutes, very smooth and tasty- with plums and chocolate mixing it up with a eucalyptus tinge . The initial surge of dryness let up and mellowed to a delightful framework of mouth coating tannins and balanced acidity. I got nothing on the nose because it was served in a plastic cup, on a pressurized airplane. The finish, lingering. I had to upgrade my initial thoughts- this is a 90 point wine and 4 stars…. delicious. If you like Metlot , go for it! Salut….

Chilcas Syrah 2011

Back on track with the Chilcas family!  I just wrote about the Carmenere disappointment and am happy to say that the Syrah bottling is right up my alley.

There are two ways to spell this varietal, Shiraz- which I find to be a much bolder expression of the fruit, and Syrah- a more refined offering and usually Old World in heritage.  This bottling is old school through and through.  Very soft in the mouth, with gentle tannins and balanced acidity.  Reserved, it shows its red berry and chocolate flavors very smoothly.  This wine, while not complex, does show off its origin and terroir very nicely (not that I’m an expert).  Did I mention the price?  A veritable steal and worthy of 5 stars and perhaps 87 points.  I think I’m on to something here, stay away from the funky Carmenere, stock up on this and the Cabernet and you can defend against any size party that pops up!  Salut….

BOOOOOM, there it goes.  What an amazing bottle of purity, essence and flavor.  Black/inky purple in the glass, I knew this was going to be good.  An incredible nose of dark fruit and vanilla made me want to just sit and sniff, for hours.  On the initial attack there is a wave of flavors, complexity at the maximum.  Blueberry, blackberry, cloves and cassis all swirled around at different times.  Multi-dimensional and layered with mouth coating tannins the likes of which I have not tasted ever before.  Extremely smooth and inviting, this wine has perhaps one of the finest mouthfeels of any wine I have tasted.  Balanced to within an inch of its life, this Barossa Shiraz has everything, for everyone.  It will drink beautifully right now, yet has the aging capacity to cellar for another 15 years, evolving no doubt.  It already displays smoothness, drinkability and a huge amount of complexity without heat, rough tannins or overt acidity.  Unlike many Aussie ‘fruit bomb’ Shiraz’s, this one doesn’t overwhelm with the fruit, but relies on subtleness to deliver the K/O.  For about $55 this is a 5 star wine only because I can’t give 6.  Technically speaking, I would go with 96 points or even higher.

As a side note, I drank this with grilled squid salad followed by Lamb Chops and asparagus, all fired on the grill and the combination was magic.

If you are looking for a ‘reasonable’ awesome wine for a special occasion, look no further.  This one will seduce the unwitting, impress the snobbish and provide you with an ethereal experience.  Salut….

Chilcas Cabernet Sauvignon 2012

Brought by a fellow wino, this was a full liter of delicious Chilean Cabernet Sauvignon.  What it lacked in depth, it made up for in charm.  Purple ink in the glass, it showed off primal hints of blueberry and mint on the nose.  Very easy to drink, it gave pleasure with the blue fruitiness mixed up with some spices (eucalyptus??).  A very subtle tannin structure was enjoyable as was the acidity.  A bargain wine that plays like a middle weight!  Some slight oak was evident, but unobtrusive.  Bang for the buck this is a 5 star wine, and technically speaking 88 points.  I’m thinking you need a few laying around in case a block party erupts.  This wine will please anyone, with or without food.  Salut….

Clos du Bois Chardonnay Calcaire 2010

A friendly bartender gave me a sample of this stunner.  Straight up one of the best Chardonnays I have had in a long time.  Classic California Chard, but not over the top.  Buttery, without being flabby.  Citrusy, without being sour.  Oaked, deftly.  This is multi-dimensional and offers apricot and pineapple to go with the green apples.  Crisp acidity, but not too sharp left me feeling refreshed, not flabby.  I reckon this may need to be bought by the case and will be the champion at the next Salmon dinner I serve, or the next Chicken I grill, or I might just drink it for the hell of it….  5 stars, 91 points (no brainer!).  Salut….

Cosentino ‘The Poet’ 2009

This is my 300th post so I planned ahead and saved something special to write about.  I’ll explain later how and where I got this bottle, meanwhile…

When I took the first sniff, I could almost smell purple.  Weird, yet delightful.  This wine is a Meritage, meaning it is a blended wine made up of the Bordeaux varietals- Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot.  The flavor profile is unlike Bordeaux, more New World and fruitier.  This wine was exceptionally smooth and the tannic structure was impeccable.  I timed the finish for over a minute- amazing.  On the palate, purple fruits galore, with a shaving of oak to balance it out.  Plums, blackberries, dark cherries and the lot.  Complex and deep, this is a show-stopping wine.  Albeit a Meritage, it lacked Old World nuances like leather and cassis, relying on it’s own terroir to provide such crisp fruit outlines.  The main players are 62% Cab Sav, providing the backbone while the 30% Cab Franc gives it the finesse.  The wine is open for business and will last at least 10-15 years.  94 points and 5 stars.

Moxie and I were on our way to Bali for our 20th anniversary and our friend’s wedding.  We decided to stop in Napa for a visit before crossing the ocean.  Our flight departed Washington, and returned.  We eventually left 6 hours later and missed our whole Napa adventure, save the delightful dinner and wine on the terrace of the Westin Napa.  In the morning, Moxie was showering when I checked the status of our flight to Hong Kong, alas a 6 hour delay, now leaving in the evening versus lunchtime.  We took the opportunity to drive up the Silverado Trail and down the other side of the valley, only stopping at one winery- Cosentino.  It was 10 am and they had just opened.  Moxie was in no mood to swill wine at such an hour, and I was legally obliged not to allow alcohol to touch my lips (you’ll see why later).  Anyway, the staff at the winery were super friendly, full of advice and sent us on our way with this offering.  I was planning to open it in Bali, but never had the right opportunity, hence I saved it for this moment.

The iconic Champagne that every wine drinker has heard of.  You can’t mention the region or the style without thinking of this brand, and for good reason.  It is absolutely delicious, no doubt about it, and it’s also pretty pricey.

Yesterday, we celebrated my parent’s 50th anniversary.  Dad had been saving the 1998 Dom for years, and stuffed it into a carry bag filled with ice and brought it along on our day trip to St. Michaels, Maryland.  Before digging into the bountiful lunch of seafood and Blue Crabs, a toast was made with this 15 year young sparkler.  Apples and yeast on the nose prepared me for what was to come.  The mousse was smooth, rounded and extremely pleasant, allowing the flavors of nuts, apples and perhaps some caramel to come through the perfect acidity.  The mouthfeel was incredible, perhaps the term ‘slick’ comes into play, for it was so easy to drink.  This wine is a baby, with years ahead and is drinking beautifully now but I reckon it could last a long time if cellared correctly.  Very complex with levels of flavors, I loved it.  I’m not well versed in sparkling wines, but for me it performed like a 95 point wine should.  5 stars is hard to give a wine that is now available for about $200, yet it seems right.  There’s a time and a place for everything; yesterday, they both happened and will make the day that much more memorable.
