I am looking to pair Eye of Round roast which has been cooking in the sous vide for 20 hours.  A Napa Cabernet is called for.  This wine is opaque and a very pretty purple in the glass.  The nose screams Napa sunshine- bright blackberry aromas with black plum, cloves, charred wood, black tea and vanilla.  The palate is quite intense with black fruit, oak nuances juicy acidity and medium tannins that carry through to the very end.  The blackberry flavors are very prominent in this one, they duke it out on the back end with the tannins to see who lasts the longest.  Th oak usage is very deft and well played.  I like the balance of this wine and it has a medium to full body.  The 14.2% ABV is barely noticeable but I did get a whiff of it on the nose.  Still young- this one will cellar nicely till 2030 but if you like a dry, slightly tannic wine then pop-n-pour right away.  92 points from me make this $50 wine a 5 star effort.  Salut….

If you read much about winemaking the name Michel Rolland will no doubt come up, several times.  He’s a consultant oenologist who works with hundred of clients worldwide.  At a steak house in Quebec they offered this blend of 55% Malbec, 19% Merlot, 10% Cabernet-Sauvignon, 12% Syrah, 2% Petit Verdot , 2% Cabernet Franc.  It normally retails for $16 and garnered high marks from the pros so I had to try it.

Inky with rich aromas of blackberry, black currants, mint, charred wood and licorice.  Full bodied with rich flavors and medium tannins.  Gentle acidity makes for great mouthfeel. 92 points.  Till 2028

Those were my tableside notes- very brief but you get the idea (I did not want to detract from the conversation to write details!). Drink this 5 star gem with steaks all day long- the pairing is magical.  Salut….

When pairing Asian food, there are so many variables- spice, complexity and flavor profiles to mention a few. Tonight we are making self-rolled Vietnamese style wraps with choices of ground chicken, thin grilled beef or steamed shrimp to go alongside the myriad of veggies that all get wrapped into a thin rice paper and adorned with sweet or spicy sauces.  I figured a lighter wine would carry the freshness of the meal better than a big, tannic monster so Pinot was the obvious choice.

This Oregonian wine is see-through and a nice shade of ruby, perhaps even starting to turn garnet (it is 7 years old by now).  The nose has fresh aromas of strawberry, red cherry, cinnamon, cedar and raspberry coulis.  On the palate it is spectacular- rich with warm red fruit alongside spicebox, cedar and cinnamon.  Gentle acidity, low tannins and a relatively full body make for a great mouthfeel that will pair as hoped.  It is drinking beautifully right now and will continue to do so until 2026 at the least.  92 points from me and at $75 per bottle, 4 stars.  Salut….

I have a lineup of wines that are waiting to be tasted, I call them the ‘bench wines’.  Tonight’s dinner is a vegetable tart with tomato reduction so I could go anywhere as far as region or varietal.  I asked Moxie to choose one, she stated ‘Number 5″.  This Tempranillo might just hit the spot.  Rich, bold, earthy and probably a great choice for the puff pastry shrouded veggies that have been caramelizing in the oven.

In the glass it is very opaque- deep purple to be precise. The 15% ABV is evident by the thick legs on the glass walls.  On the nose I get spicy oak, earthy bramble, rich blackberry, blackcurrant and roasted coffee.  There is a whiff of heat, but not obnoxiously overpowering.  There is complexity to this nose that I can’t wait to taste.  On the palate it is all I hoped for, classic Spanish Tempranillo- rich black fruit, good acidity, full body and grippy tannins that make for a great mouthfeel and long finish.  The blackberry fruit is almost jammy and somewhat hides the coffee I got earlier but it re-appears on the back end.  Good oak integration here folks, not overdone yet present.  I believe it scored highly with a commensurate price north of fifty bones.  For me, it’s a 92 pointer that gets 5 stars cause I got it for $20.  Drink till 2030 with grilled meat.  Salut….

This South African Cabernet is a deep purple color with thin legs in the glass.  On the nose I get black plum, smoke, blackcurrants, Ribena, cassis and espresso.  The palate has an upfront astringency that gives me pause.  The fruit is trying to come out but the greenness is overwhelming.  I’m going to give it a rest and try later…..

Okay- after a two hour break this wine has opened up tremendously.  The dark fruit compote has finally come through with gentle acidity and firm, yet sidelined tannins holding the whole show together.  I am starting to see why the pros rated it upwards of 92 points.  Young, yet with structure and fruit to weather some cellaring- this wine will drink nicely from 2023-2028.  It went nicely with my Tri-tip roast.  At $20, It’s worth a look for sure, holding some for the drinking window.  5 stars for sure.  Salut….

Deep lemon color with a nose of tangerine, lemons, popcorn and acacia. The palate is bright and very citrusy, yet the butter component is missing.  I’m confused.  Green apple, baked bread and pear are playing second fiddle to lemon and tangerine.  It’s evident that Malolactic fermentation has been blocked, keeping the fruit vibrant and fresh.  Oak influence is also evident, albeit deft.  The wine has medium acidity and is quite full bodied.  On the finish I get a nuttiness- like stone fruit seed.  Yummy stuff that gets 92 points.  This is an iconic wine that merits a try, even though it rolls in at $50. 5 stars from me.  Pair with seafood, perhaps even some stuffed, baked mushrooms.  Salut….

This Pinot Noir is deep purple and semi opaque in the glass.  On the nose it is quite intense with red and black cherry, raspberry, oak and strawberry bubble gum.  The palate is gorgeous- smooth with lithe tannins, gentle acidity and a ton of fruit flavor.  Layers or cherry, raspberry and mocha notes intertwine, some strawberry is present but the complexity of this wine is awesome.  I love restrained Pinots, wines that are seductive and not overpowering.  This one is definitely a more fruit forward version, New Worldish yet it has such purity of fruit and is not over-the-top extracted.  The finish is long.  The fact that it is only 13.3% ABV makes it a refreshing change from the monsters I have been drinking lately.  Drink till 2026 with lean cuts of beef, maybe a hearty Salmon on the grill or some well seasoned Cornish hens.  92 points from me for this $58 treat.  I love this winery and have enjoyed several of their previous wines.  5 stars.  Salut….

My little group of virtual wine tasters insisted on a mid-summer gathering so I picked some real beauties, starting with this Pinot Gris which we tasted at room temp and chilled.  Being a Reserve, it offered depth and complexity that many were not expecting- it was a hit.  In the glass it showed pale gold to light yellow, depending on who was commenting!  Aromas of pear, pineapple, blossom, honey, ginger, elderflower and nectarine were noted.  On the palate, flavors of honeysuckle, lime, and orange blossom coupled with a vegetal aftertaste.  I noted that it had good acidity, getting 92 points from yours truly.

The chilled version was more precise with some minerality on the nose coupled with cotton candy, marzipan, passion fruit, honey, ginger and peach- a whole different animal!  On the palate we got a fuller bodied wine with flavors of pronounced orange, less lime this time but lemon drops, ginger and Welch’s white grape juice.  Medium (+) finish btw.  I was consistent with the 92 points and for $25 it is a great intro to a higher quality Pinot Gris.  5 stars, pair it with shellfish and perhaps cellar for a few years.  Salut….

My friend Jimbo is in town and I promised him some good wine. Back in 2003 I bought three cases of this stuff and now I am opening bottle #26, having tasted the evolution over the past 15 years or so. This was a spectacular example of perfectly aged Bordeaux. It is at peak right now, showing layers of tertiary fruit, rich cassis, gentle acidity and soft tannins. Balanced perfectly with a sublime mouthfeel. I’m super happy with the results of my patient cellaring. I believe this cost me $59 back in the day, now it will run over $100. A good deal if you ask me that gets 92 points and 5 stars. Probably need to think about the rest of the case as I don’t think there is much left in the tank with this claret. Here are my class notes. Salut….

Chateau Lynch Bages 2001, Pauillac, France 13.0% ABV

  • Appearance- Deep garnet
  • Pronounced nose of dried blackberry (Cassis), leather, earth, tobacco, cedar, forest floor.  Fully developed.
  • Palate- dry, medium (-) acidity, medium (-) tannins, medium alcohol, medium body, pronounced flavors of dried blackberry (cassis), tobacco, leather, forest floor and charred wood.  Long finish.
  • Conclusion- outstanding quality, drink now: not suitable for aging or further aging.

Twenty years ago I bought a case of this Fifth Growth Bordeaux. Last year I gave this bottle as a house warming gift to friends, who sat on it and waited for my return. This past weekend we opened it in all its glory- it was delicious.

Totally showing its age with some serious bricking and sediment in the bottle, it is medium tawny in color. The nose is loaded with tertiary flavors of tobacco, cedar, leather, stewed prune and cinnamon stick. The palate is super smooth with tannins that are so integrated and balanced by a modicum of acidity. The fruit flavors have pretty much disappeared- it’s all about the tertiary notes. Classic Bourdaux that’s been aged with a smooth mouth feel.

Tell you what- there’s still some back end juiciness and tannic grip which tell me this wine has a little more life in it!  Tremendous value when I bought it back in the day. 92 points, which is amazing considering the pros went with high 80’s when they first tasted it. The ’01 Left Bank vintage has outperformed anyones expectations as can be witnessed by this exceptional bottle that is currently running $80 at auction. 5 stars, but drink this delicate juice sooner rather than later.
